I am an Irish-American that runs a Mexican bar/restaurant in central New Jersey. After Cinco de Mayo on Monday, our restaurant slows down pretty much to a halt, since no one wants to see anything Mexican on their plate or in their glass for a good week after getting stuffed and hammered. So, needless to say, we are slow today. I was bored, looking at the UFC website, and figured I'd pose a question to my fellow tickers...If you could be UFC match-maker Joe Silva and make the matchups that you wanted to see, what would they be?
I looked up the rumored fights on MMAweekly.com, and took out anyone who has a fight coming up. The following is a list of fighters that have no UFC fights scheduled, yet remain under contract to the UFC. Who would you like to see paired up in the near-future?
Heavyweight - Andrei Arlovski, Gabriel Gonzaga, Heath Herring, Cheick Kongo, Brad Morris, Antonio Rodrigo Nogueira, Eddie Sanchez, and Cain Velasquez

BTW, I feel like Cinco de Mayo could be such a big party day/night. Here in BMore it wasn't that big (not like St. Patty's day anyway). I imagine that has to do with the fact that there's a strong Irish contingent down here and not as big a latino demographic. That shouldn't stop us from partying hard!!!

Phoenix - I was right with
Phoenix - I was right with you on Diaz-Maynard, Lauzon-Pellegrino, Henderson-Franklin and Liddell-Rua.
I kind of want to see and Arlovski-Nogueira fight for the titlw, as I can't think of another heavyweight that deserves a title shot more right now. I'd like to see Herring-Gonzaga, too. And Big Mac's favorite, Cain Velasquez take on Cheick Kongo.
Light heavyweight, I'd like to see Bonnar-Hamill finally happen, and Tim Boetsch-Houston Alexander would be a stand-up war.
Middleweight, I want to see Anderson Silva dominate Okami, just for the record. Maia-Jason MacDonald would be a great fight on the ground, and Quarry-Alessio Sakara would pit two pretty solid strikers.
At welterweight, St. Pierre-Jon Fitch is the most appealing fight for me, with maybe a Matt Serra-Akihiro Gono fight, and a Karo Parisyan against either Josh Neer or Anthony Johnson.
Lightweight would include Frank Edgar-Manny Gamburyan, and Sam Stout-Clay Guida.

Pretty close there, Fight
Pretty close there, Fight Ticker. I didn't see your post before I put mine up.
Cinco de Mayo is huge in New Brunswick, where I work. It's the real home of Rutgers University, and the kids here are looking for a reason to drink at any turn. The majority of our Cinco customers are white college kids. There are four or five bars here that cater to the Mexican population in town, and they are pretty rough spots. The college kids know not to go in those bars, for fear of getiing robbed or stabbed.
St. Paddy's Day is huge in my hometown. Our parade actually was rained out this year, and they rescheduled it for April 20, over a month after Paddy's day, just so we could celebrate it. People all through the town left their decorations up, and the city council voted to keep City Hall decked out for Paddy's day and not put up the town's Easter decorations. My hometown is about 45% Irish, so it's a pretty fun day out.

I think Hendo needs a
I think Hendo needs a slightly easier fight to get back on track. Losing back-to-back fights to the top guys in each division has to be tough... and a more winnable fight is in order for him in my opinion.
How about:
HW - AA v. Big Nog
LHW - Rich Franklin (more interesting having him in LHW imo) v. Stephen Bonner -> winner to face Machida (assuming he beats Tito)
MW - Hendo v. Quarry
MW - Silva v. Okami
WW - GSP v. Fitch
LW - Guida v. Diaz
LW - Pellegrino v. Maynard (if Pellegrino wins he gets title shot)

Captain - One of my golf
Captain - One of my golf buddies is the General Manager at that On The Border. I am the GM at Marita's Cantina, right across the street from the train station in downtown New Brunswick. It's a 170 seat bar/restaurant right on Route 27. It's a comfortable spot, since I live two blocks away, and have been tending bar/managing here for 10 years now (aka forever).
